I made a really tasty burger tonight i thought i'd share:

Ingredients

2.5-3 lbs Ground Beef (85/15) at room temperature
1 yellow onion
1 block (enough for 1 slice on each burger) smoked, swiss cheese (aged if possible)
1 bell pepper (any color, i used orange)
apx 1/3 c ponzu (citrus flavored soy sauce, you might be able to substitute regular soy sauce and a little bit of lemon or lime juice)
apx 1/3 c worcesterchire sauce
1 pack (4-8 slices) panchetta
1 small can of chipotle peppers in adobo sauce (or use about 6 fresh chipotles if you can find them, i couldnt)
1 bottle Chipotle Mustard (made by Silver Spring, if you cant find it, try mixing some spicy mustard w/ fresh chipotles in a food processor)
Olive oil
butter
salt, pepper, your favorite burger seasonings
4 of your favorite hamburger buns

Instructions:

1. wrap atleast the bottom half of your pepper in aluminum foil and let roast in a 300-350 degree oven about 40 minutes
2. chop the onion into small thin pieces
3. add some butter and olive oil to a pan (I add a splish of rice wine vinegar, you could also add white wine or cider vinegar) and add the onion pieces, let slowly cook at medium low heat for about 40 minutes or untill the onion begins to be translucent. (You should probably mince and add the chipotles now if you are using fresh instead of canned)
4. Shape the ground beef into 4 patties
5. Spread the ponzu and worcestershire around both sides of each burger
6. Add salt pepper and seasonings (sparingly though) and then brush lightly w/ olive oil. let sit for 5 minutes while you do the next steps
7. If you have 5 or more pieces of panchetta, add a piece to the onion pan.
8. Open the can of chipotles and pull about 6 out and add them to the onions. Be careful not to get too much sauce in the pan so your onions can still cook to that translucent point. You can also probably bump the heat up to medium.
9. Throw those burgers on the grill. I think mine took about 8 minutes per side on medium low heat.
10. While the burgers cook you still need to cut 4 slices of the smoked swiss, and cook the panchetta. To cook the panchetta, slide the onions to one side of the pan they've been cooking in and cook the panchetta slices (its basically a cross between bacon and canadian bacon) on the other untill crispy around the edges.
11. When the burgers are almost done take out your bell pepper and chop it up small and thin like the onions.
12. Remove the chipotles from the onions if you were using canned chipotles.
13. When the burgers are done add a layer of the onions and bell pepper on top of each of the patties and cover that layer w/ the cheese so it (hopefully) melts and holds it together. Add a slice of the cooked panchetta on top.
14. Bump the heat up to high and throw the buns on the grill for about 20 secs to toast them.
15. Apply a generous layer of the chipotle mustard to the bottom half of the bun, then add the patty and enjoy.

Makes 4 burgers
